Food safety self-inspection audit ("reality snapshot"), carried out area by area (repeatable section): good hygiene and manufacturing practices, order and cleanliness, condition of equipment and building, contamination risks (insects, foreign bodies, chemicals, makeshift repairs), photo and observations; then an interview with at least three employees (food safety manual, pests, allergens, personal hygiene, CCP) and rating/follow-up of gaps.
