ISO 6658:2017 — Sensory analysis methodology
ISO 6658 is the hinge of a sensory programme: it addresses neither the rooms nor the people, but the test itself — how it is chosen, how it is run, how it is analysed and how it is reported. It is the grid that answers ISO/IEC 17025 § 7.2 for a sensory laboratory, where the other grids answer for facilities and competence. Its clauses 5 and 6 are a catalogue of methods: grade as "not applicable" those the laboratory does not practise, and check the conditions of those it does. The most common finding is not a statistical error: it is a test objective never written down before the samples were served — after which no analysis can recover the question that was not asked.
