ISO 8586:2023 — Selection and training of sensory assessors
If the panel is the measuring instrument, ISO 8586 is how it gets calibrated. It does not ask you to recruit gourmets, but people whose acuity, consistency and ability to describe have been tested and then kept up. Use this grid when a laboratory sets up a panel, when it prepares for accreditation, or when its sensory results start to diverge with no instrumental cause. The point most often neglected is not selection — which gets done willingly, once — but retraining: a panel left idle for two months is no longer the panel that was validated, and nothing in the data says so.
